DIY Cookie Bar


Cookie Bar for Christmas Eve


Who doesn't love a cookie bar? Especially on Christmas Eve. My kids are so pumped about Santa coming and they're dancing around the house.
I put them to work. 
We first whipped up a batch of chocolate chip cookies using our Kitchen Aid mixer. What a game changer. I always used to keep mine hidden in the cabinet and got too lazy to take it out because it is big and heavy. 
But this time I went for it. Super duper easy to mix things up. And I'm just going to keep it on the counter for easy access.



We played with the ingredients a bit this time too. I followed the Nestle Chocolate Chip bag and then added some vanilla cake mix to the batter, about 1 cup per batch. It gave the cookies a great flavor and some fluff.
Other tricks I learned: Line the cookie sheets with aluminum foil used for baking. Nothing sticks. No messy spray either. I also chilled the batter for several hours, and slightly undercooked them before taking them out of the oven. I left them on the hot trays to finish cooking and the results were soft, fluffy chocolate chip cookies.





Now came the Peanut Butter Kiss Cookies.
 Oh. My. Delicious.
These were super easy. I listed the recipe at the end of this blog entry so you can do these too, with most of the ingredients probably in your pantry already. My trick to these: press the Hershey kisses on after you pull the cookies from the oven, and let them slightly cool. The cookies still need to be warm though, so the kisses stick to the center of the cookies.





Cake stands are a great way to display cookies, too. I have an assortment, and I use different heights and sizes and line them down our table or buffet server. Here are two at Target that are similar to mine:

Peanut Butter Kiss Cookies Recipe
1/2 cup of Peanut Butter
1/2 cup of butter, softened
1/2 cup of Sugar
1/2 cup of Brown Sugar
1 tsp. Vanilla
1 Egg
1 1/2 cup of Flour
1tsp of Salt
24 Hershey Kisses (unwrapped)

1. Preheat Oven to 350.
2. Mix together peanut butter, butter, sugar and brown sugar until creamy.
3. Add egg and vanilla and beat together
4. Combine flour, baking soda and salt in another bowl.
5. Slowly add flour combo to creamy mixture.
6. Roll 24 1" balls and place on cookies sheet.
7. Bake 12-14 minutes
8. Cool slightly and then press Hershey kiss in center of cookie.
